Turkey 101:



I'm blessed to have this amazingly talented brother, Chef Craig. It's a joke around our family that if you have a cooking emergency or a need to know a random piece of culinary trivia...you call your chef hotline operator, Chef Craig!

Well, I sent him an email last week because I was only slightly (ahem) freaking out about cooking a Thanksgiving turkey...that's right, forget the fact that I'm 31, married with children, a mortgage and a professional career...it's cooking my first Thanksgiving turkey that really makes me a grown-up! Who do I turn to for help for everything from what type and where to buy a turkey to what to put it in/on (bag? rack?) to gravy tips...Craigery, of course. My inquiry was answered with the most entertaining and educational email I've ever received...I'm seriously thinking I need to send this baby in to Food Network insisting that they give my bro his own show!

Welcome to Turkey 101

First of all....Bird Selection.
I like to buy organic Kosher Turkeys. The reason I like organic is not nearly as important as the reason that I like Kosher Turkeys. I prefer Kosher because they have already been salt brined, therefore there is no reason to have to soak your turkey in a saltwater solution. This can be really messy and since you have a two year old, better to just skip it and pay a slight bit more for the convenience.

Secondly....Bird Prep.
Since you've purchased a Kosher bird, there is no need to brine the turkey....but we've already covered that. So now on to flavor selections. The key to having a really moist turkey is adding some sort of fat. I know I know, fat is bad, but hey, it's Thanksgiving not New Years, so bring on the fat, we'll diet later. My fat of choice for this application is regular old unsalted butter. Butter is great, but it's not all that flavorful on its own, the French are going to kill me if they ever got their hands on this email, so I like to make an herb compound butter. Soften two sticks of butter at room temperature, plop your butter in your wonderful Kitchen Aid and add to that the zest from one lemon and about two tablespoons of fresh thyme leaves. A little bit of salt and pepper and you're ready to flip the switch and make some yummy butter.
Now then, we're going to stuff a good bit of that butter under the skin of Mr. Turkey. So, hoist him up on the counter with what's left of his neck facing you. Put your hand under the skin and make a pocket between the skin and the breast. Put half of the butter on either breast. Now that the sort of gross part is done, Take your lemon that you zested and cut it in quarters and throw it in the bird along with some of the thyme or thyme stems. Now for the outside of the turkey, drizzle Mr. Turkey with some olive oil to help brown and crisp the skin. Salt and pepper and some more fresh thyme and some fresh parsley or sage, whatever you like. Or you can use the Simon and Garfunkel recipe, Parsley Sage Rosemary and Thyme. That does it for flavoring, how much do you know about trussing a bird. If you don't even know what trussing is, just tie his legs together so he's not flayling about in your oven. If you know how to truss a chicken or turkey....Bravo, get to it.

Part the third.....Cooking the Bird (hey that rhymes)
Forget the bag. Foget the rack. Neither of those things add any flavor to your turkey or to the ensuing gravy. I like to cook on mirepoix, what is mirepoix you ask, its a combination of 50% onions, 25% carrots and 25% celery. Just cut all that up into big chunks, enough to cover the bottom of your roasting pan. Once you have enough put that in the bottom and put the bird on top of that, breasts up. As for cooking times and temperatures go, it really depends on the size of your turkey, but I'd say 325 degrees for a couple of hours until a thermometer put into the thigh of the bird reached 165 degrees. Then make sure you let the turkey rest for a good while before slicing him, let those juices settle back. But while he's resting you can make some yummy gravy. Take all of the stuff you have in the bottom of that roasting pan and put it in a sauce pan with some store bought chicken stock. Let that simmer for a little while then thicken with a cornstarch slurry and then strain and skim and adjust the seasoning.

I hope this helps, I know it's a lot of information to try and digest. But, if everything works out, you'll be a turkey hero. One of the most important things is to not overcook the turkey, he'll dry out real fast. So please don't use that little pop up time that they sometimes shove in the bird. Ideally is one of those contraptions that you can put in the meat and leave and the alarm outside the oven goes off when it gets to a certain temperature. They sell them at Walmart and all of the fancy kitchen stores too, like Williams Sonoma and Viking.

Great things He hath Done!

Wow, where to even begin? It's becoming quite obvious, so I hope you know by now the amazing news of our newest little blessing we are expecting to arrive around April 25th! We got to see our sweet baby GIRL on Friday and she is growing right along, even ahead of schedule for size!

Because I feel like God has given us this precious miracle and I can't deny the chance to bring Him the glory He is worthy of, I need to explain the journey we have been on the past year. This page is normally strictly my happy place, so bear with me through the valley as God leads us through to how He showed us His graciousness...

Exactly one year ago I was pregnant with our second baby, though I didn't know it until shortly after Thanksgiving - when we found out we were so thrilled!! Busy planning how to share the good news with our families over Christmas, I was a little nervous that I hadn't felt any of the early nausia I had with Sutton. Our 7 week check-up confirmed my fears when baby didn't have a heartbeat. Though my doctor seemed very hopeful that we were just too early and I had miscalculated dates, I was certain this was terrible news. We miscarried on our 6th anniversary just after Christmas.

God is gracious and took care of us through that trial. His hand sustaining us and giving us hope that we could try again soon. Sadly, shortly after Easter during an 8 week check-up for our third baby we were heartbroken to again find no heartbeat.

We then began our journey with a fertility specialist and endured all types of testing. Praise God for the knowledge he gives to these doctors and for their efficiency and care. There is no way to describe the feelings you have when you think you might not ever get to have another baby. Even going to the park with Sutton and watching siblings play with each other as we looked on was incredible to have to face. And being put through the tests we were put through...I had to pray HARD to fight off the fears of what terrible things they might possibly find wrong.

After 6 weeks of working with the specialists, we learned I had inherited a simple genetic mutation that keeps me from processing B vitamins properly - thus making it hard for a baby to form properly. The remedy? Just taking a super mega dose of B6, B12, and Folic Acid a couple times a day. Praise God! Am I right? Not only that (another awesome God thing...), I was on extra B vitamins somewhat early in my pregnancy with Sutton because they were supposed to help with nausea. How Great is Our God!

Which leads us to, finding out we were expecting just days after the due date of the baby we lost in December and getting to see our fourth baby's heartbeat just one week before Sutton's second birthday.

Is it crazy for me to already think that she looks like me? We are so thrilled and thankful to be expecting another special blessing in our little family and thankful for the many prayers of family and friends through this trial. Sutton is going to be the perfect big brother to his little sister and he already is asking when is he going to get to play with "Baby Sister". So sweet.



God has special plans for you, Baby Girl.

On the Menu:

My current favorite, easy, everybody-loves-even-the-toddler recipe:

Spinach Lasagna

1 egg
large container ricotta
box of frozen spinach, thawed and drained
package shredded italian blend cheeses
jar of favorite spagetti sauce
1/2 box no-bake lasagna noodles

Grease an 8x8 pan. Mix up egg, ricotta, spinach, and 1/2 cup shredded cheese. Spread spagetti sauce on bottom of pan, top with noodles in a single layer, followed by a layer of ricotta/spinach mixture. Repeat layers a couple times (until near top of pan - hey, you know how this lasagna business works!). Final layers should be noodles then sauce then top with shredded cheese.

Cover tightly with foil and cook for about 45 minutes at 350 (uncover last 5-10 minutes to brown cheese). Rest for a minute before cutting up and serving to some hungry folks (that's the lasagna that rests, not you...heck, you should rest, too).

Couponer-in-Training:

thanks to a training session at riverdale baptist by the queen-couponer herself, kim blair, i'm going to give it a shot at saving some money using coupons (gasp!). i like looking at coupons, i like cutting coupons out, but for some reason i really don't like using them. i guess it seems like a lot of work to save a little money and add the big inconvience of making people wait in line while i drag out the coupons (not to mention the looks!).

thanks to a little confidence from the lesson last week and my peer support in leigh ann and lots of online resources, i gave it a shot last night at kroger and saved 20% - not a huge amount considering the experts save about 50-70% on each trip out, but i was proud of that $$ i saved with minimal effort.

i'll never be able to hang with those ladies, i'm sure, since i have my own rules like:

1. i'll only go to one or two stores (i'm not driving all over town going to 5 different stores just to get a free toothbrush or brownie mix)
2. i'm not going to buy something i wouldn't normally use just because it's 75-90% off
3. i'll only go to walmart when it is ABSOULTELY necessary - it's best for my mental health if i stay away
4. my free time is very valuable to me because i don't have much of it and i'm not going to spend more than an hour per week digging through and clipping out coupons

so, i'll keep trying and see if i can move a little money from our food budget to our home-redecorating budget ;)

Brave Little Lion:

friday was our uabc fall festival - fast becoming one of our favorite fall traditions! it was made even better by our little sutton who was LOVING everything about it! i came to the realization fast that this isn't my sweet little baby anymore...he was all about that inflatable bouncy thing and the giant slide that he even climbed up by himself and slid down several times! that thing was even a little scary for mommy! he was reluctant at first to tackle the inflatable train that had an obstacle course inside, but on the second attempt he loved it. what a cutie and so much fun!

last month we got to take sutton to his first clemson tiger football game! he had an awesome time - loved the tailgating, the food, the footballs, the game...every thing! just 16 years from now we might see him down on that field ;) thanks gigi and granddaddy-o for the awesome tickets! if it hadn't been close to nap time, i'm sure sutton would have wanted to stay for the whole game, but it worked out perfectly anyway...we left in time to walk back to nana & granddad's lake house before the rain set in. i think the game had 2 or 3 rain delays, but we were enjoying some pepino's awesome sausage pizza and a cozy rainy day nap so it didn't bother us!
